Recipe: Vegan White Wine and Herb Roasted Carrots

These Vegan White Wine and Herb Roasted Carrots are a perfect side dish for any meal. Made with organic Italian white wine, fresh herbs, and tender roasted carrots, this recipe is vegan-friendly, gluten-free, and easy to make.   • 1kg carrots, peeled and trimmed
  • 1 can (250ml) Defy Organic Italian White Wine
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper


  1. Preheat your oven to 200°C.
  2. In a large bowl, whisk together the white wine, olive oil, minced garlic, chopped thyme, chopped rosemary, salt, and black pepper.
  3. Add the peeled and trimmed carrots to the bowl and toss well to coat.
  4. Transfer the carrots and the marinade to a large baking dish.
  5. Roast the carrots in the preheated oven for 30-40 minutes, or until they are tender and lightly browned.
  6. Stir the carrots once or twice during the cooking process to ensure even roasting.
  7. Once the carrots are done, remove them from the oven and let them cool for a few minutes before serving.
