Recipe: Vegan White Wine and Herb Roasted Carrots

- 1kg carrots, peeled and trimmed
- 1 can (250ml) Defy Organic Italian White Wine
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- Preheat your oven to 200°C.
- In a large bowl, whisk together the white wine, olive oil, minced garlic, chopped thyme, chopped rosemary, salt, and black pepper.
- Add the peeled and trimmed carrots to the bowl and toss well to coat.
- Transfer the carrots and the marinade to a large baking dish.
- Roast the carrots in the preheated oven for 30-40 minutes, or until they are tender and lightly browned.
- Stir the carrots once or twice during the cooking process to ensure even roasting.
- Once the carrots are done, remove them from the oven and let them cool for a few minutes before serving.
